Throughout the year, we will post recipes that feature produce or other specialty food items that are in season for that time! We hope you will try these recipes, and visit the Market (during our season) to purchase fresh and locally grown ingredients!
Chantilly Potatoes (adapted from New York Cookbook)
New York State's only "Rails-to-Trails" Farmers' Market!
1/4 to 1/2 cup Milk
Salt and Pepper
1/2 cup Cream
1/2 cup grated Cheddar Cheese
Cook, drain and mash the potatoes, to measure 3-4 cups. Add milk, in increments, until potatoes are light and fluffy. Stir in butter, salt and pepper to your preferred taste. Place potatoes to a greased casserole dish. In a separate bowl, whip cream until stiff. Gently fold in cheese and spread mixture over potatoes. Bake at 350 degress for 15 minutes, or until top of potatoes are lightly browned.
